FAQ-CUPCAKES- * what is bavarian (bavarois)? Bavarois are the silky, melt-in-mouth mousse-y rich mixtures-- mostly fruit flavored--set in little moulds to be turned out to serve. I want to put this kind of indulgence into my light and airy chiffon cupcakes--as a soul satisfying element. And here comes the idea of chiffon in a cup with bavarian cream in the center. The base for a bavarois is creme anglaise into which dissolved gelatin sheet is stirred. This is combined with a fruit puree or other flavoring mixture, then enriched with softly whipped cream and French meringue. But I often found the addition of French meringue makes the filling too sweet, especially if the fruit doesn't have a strong acidity to stand up the added sugar--that comes my version of bavarian without the Meringue which makes it much low in sugar! * What is the difference between the traditional cupcakes and our cupcakes? Even you're a fan of the traditional cupcakes, you might still agree that cupcakes are definitely not your daily treats. They are rich, packed with butter, not to mention the loads of sugar packed in those pile high icing on top the cupcake. Our cupcakes, on the contrary, with chiffon being the cake base, is absolutely free of butter. The only oil used to keep the cake moist is extra light virgin olive oil, thus add no saturated fat in your calories consumption. There's less egg yolk in the cake batter too, more egg whites are added to make the cakes light and fluffy. Even the bavarian inside is made with lower proportion of egg yolk to make it a bit more healthy, yet preserving the authentic taste and texture. As a final touch, our cupcakes are topped with a thin blanket of chantilly, barely sweetened with vanilla sugar. * How should I store the cupcakes? Because the Bavarian cream was made with minimal gelatin, fresh cream, sugar, and absolutely no additives or preservatives, they are naturally more fragile. They require a bit of more care in handling and storing. Please store your cupcakes in the chiller (please don't just leave them in room temperature!) Your cupcakes will be good in your fridge for up to four days! * Do you have minimum order? Because we are baking in small batch everyday, we currently do have a minimum order. We are asking half dozen of cupcakes to start with. But you are more than welcome to call and find out if certain combination could be made. |
